Cave de Bissey is a small group of 40 growers established since 1928 in a village located in the Côte Chalonnaise. It is one of the oldest cooperatives in the region and is very well known locally for the quality of the wines. This sparkling wine is made from Aligote, Chardonnay and Pinot Noir. Traditional ‘Champenoise’ method. Maturation on the lees for a minimum of 36 months. White fruits, lemon balm, and floral notes of acacia. Fine bubbles, elegant on the palate, fresh with a long finish. Well-structured!
